Description
O Requeijão Serra da Estrela is the product obtained by precipitation or coagulation, by the heat of the proteins contained in the serum resulting from the processing of Serra da Estrela DOP cheese. Raw sheep's milk can be added to the serum, obtained from milking sheep of the Bordaleira Serra da Estrela and Churra Mondegueira breeds, drinking water and, sometimes, under very particular and duly authorized conditions, mountain goat's milk, of the Serrana or Jarmelista varieties. The Serra da Estrela curd presents–in the form of a creamy to slightly granular mass, smooth and uniform, white. It takes the shape of the container that contains it (approximate shape of an irregular low cylinder). Features, ainda, a well-connected texture, evenly creamy, smooth to cut and white in color. The taste and aroma are pleasant, merging in the mouth.
