Description

The cheese Serra da Estrela is manufactured with Serra da Estrela sheep's milk and / or Churra Mondegueira and coagulated by the action of the thistle flower, to which is added a little sea salt.

Thus a cured sheep's cheese is born, medium-crusted, semi-mole paste, buttery, white or slightly yellow in color with few or no eyes, obtained by slow depletion of the curd.

Its interior is well connected and has a strong flavor, pleasant and persistent aroma. Contains a moisture content of 61% a 69% and fat in the stratum between 45% a 60%.
